Lomo Saltado

Lomo Saltado (Heidi Gibbs)
Peruvian Recipe

Ingredients:

1 pkg. frozen french fries
1 pound beef strips (cut beef against grain)
1 onion cut into strips
3 tomatoes, seeded and sliced into strips
3 tbsp. vegetable oil
1/2 tsp. garlic powder or minced (two cloves)
1 tbsp. white vinegar
1 tbsp. soy sauce
2 tbsp. parsley
1/4 tsp. Peruvian Yellow Paste or Yellow Chilli Pepper (optional)
Hot cooked rice

Preparation:

Prepare french fries.
~ While french fries are cooking, pour 2 tbsp. oil into fry pan or wok to high heat. Add beef. Season with salt and pepper. Stir fry for about 2 minutes. Remove beef and set aside.
~ Add 1 tbsp. of oil into wok and return to heat.
~ Add onion, garlic, and paste (optional). Stir fry for 2 minutes.
~ Add tomatoes, soy sauce, vinegar, (don't forget that soy sauce has salt in it). Stir fry for 1 minute.
~ Return beef to wok.
~ Add french fries.
~ Toss everything together.
~ Adjust seasoning with salt and pepper.
~ Serve with rice.

French Dip Sandwiches

¼ c mayo with 1 Tbls horseradish or to taste
1 can beef broth
1 lb deli roast beef
4 slices havarti or provolone cheese
4 hoagie rolls
1 med red onion, thinly sliced

Caramelize onion in 1 tbls of olive oil. Heat broth, add meat and heat until warm. If desired toast rolls. Spread each roll with mayo mixture, add 1 slice of cheese, ¼ of the meat and onion. Serve with some of the broth in a bowl for dipping. Also good with sprig of fresh rosemary heated in broth.

Inexpensive Lasagna

Inexpensive Lasagna

1 5oz. pkg Lasagne noodles (I use the ready to bake ones to cut down on prep time)
1 lb. ground beef
2 cans of tomato soup
16 oz cottage (you can fancy it up with ricotta though)
spices such as oregano, parsley, basil and garlic to taste
grated cheddar cheese
grated motzerella cheese
 
Cook and drain ground beef.  Boil noodles.  Add tomato soup and spices to ground beef.  Layer noodles then meat sauce, cottage cheese and grated cheese.  Repeat.  Bake at 350 for 20 min. or just until heated though.

Easy Beef Noodle

1 lb. lean ground beef
1 can Campbell's French onion soup
1 can water
1/2 c. ketchup
1 (12 oz.) pkg. wide egg noodles

Brown ground beef in stove top frying pan, until completely cooked. Add soup, water, and ketchup. Stir. Add noodles. Cover and let it simmer for 20 minutes on low-medium heat. Stir occasionally. Ready to serve once the excess moisture is gone.

2/3 C. Evap. milk
1/2 C. cracker crumbs
1 1/2 - 2 lbs. Hamburger,
1 egg
1/2 C. onion
1 T. mustard
2 C. grated American Cheese (NOT cheese food or product)
salt & pepper to season

Mix all above ingredients.

Slice 1 loaf french bread lengthwise in half. Wrap foil around bread with shiny side out.

Divide meat mixture in half and put one on top of each side of the french bread, evenly covering the entire slice.

Bake @ 325 degree for about 25 - 35 minutes till meat/cheese is bubbly and no longer pink inside.

Taco Hash Browns

1 pound hamburger, browned and drained
1 pkg. taco seasoning (added to browned hamburger along with 1 cup water)
16-20 hash brown patties
2 c. cheddar, shredded
Optional add-ins... sour cream, salsa, jalapenos

Directions: Don't let the water completely evaporate from the meat mixture. And start the hash browns cooking in the oven (as directed on the pkg.) right before you start browning the hamburger.

When hamburger is done and seasoning has been added, the hash browns should also be done. Crumble hash browns in big serving bowl, add cheese and then the meat mixture (the extra seasoned water in the cooked beef will soak into the potatoes). Mix well. Serve in bowls then you can add in whatever you want. Sour cream, salsa, jalapenos and whatever else you can find.

1 lb ground beef
1 can green beans, drained
1 can tomato soup
2 c mashed potatoes
1 c shredded cheese

Browned ground beef. Add green beans & tomato soup. Pour into baking dish. Top with potatoes, sprinkle with cheese. Bake @ 350 about 20 minutes.

OR

Sheppard’s Pie A different version ☺

1lb ground beef, browned
Or left over roast
1 pkg frozen mixed vegetable
2 cups prepared brown gravy
mix. I buy a big container at Costco or Sams
2 to 3 C mashed potatoes
Shredded cheese

Mix the ground beef, vegetables, and brown gravy and pour into baking dish. “Frost” with mashed potatoes, then sprinkle with cheese. Bake @350 until hot and bubbly.

Porcupine Meatballs

1 ½ c cooked rice
1 lb hamburger
½ c bread crumbs
1 egg

Combine above ingredients.

Shape into meatballs and drop into a hot mixture of:
2 cans tomatoes 1 can water

Simmer 20 min. serve over mashed potatoes.

MANICOTTI

MANICOTTI (Freezes well)

1 lb hamburger
1/2 cup chopped onion
15 oz Ricotta Cheese
1/2 cup mozzarella cheese, shredded
Salt & Pepper to taste

Brown hamburger with onion, salt & pepper to taste. Cool and combine with Ricotta cheese and shredded mozzarella cheese. Stuff uncooked manicotti noodles. Put 1/2 jar spaghetti sauce in bottom of 13x9-inch pan. Arrange shells in pan, cover with remaining sauce and 3/4 cup shredded mozzarella cheese. Add 1/4 cup water. Cover with foil and bake at 350 degrees for 1 hour 15 minutes. Shells will cook!

5 Bean Soup

2 cans pork & beans (15 oz)
1 can black beans
1can kidney beans
1 sm. red beans
1 can garbanzo beans
1 C ketchup
¼ C brown sugar
1 T white vinegar
2½ C water
1 tsp liquid smoke
1 onion chopped
Dash of worchestershire
1 lb hamburger, browned
½ lb bacon cooked and crumbled
garlic salt

Combine in crock pot cook on low 6-8 hours.

Creamed Beef for SOS

Creamed Beef for SOS (Old Military Recipe)

Traditionally served over toast. But try rice, hash browns, biscuits, or mashed potatoes.
To give it the best flavor (and do it the way Grandma did,) don’t drain the meat after cooking, you need that to make your gravy.

1 pound ground beef
2 cubes chicken bouillon, crumbled
1/2 teaspoon garlic powder
1/2 teaspoon ground black pepper
1/4 teaspoon onion powder
1/2 cup all-purpose flour
2 cups low-fat milk or 1 can beef broth with 1 cup of milk

Heat a large skillet over medium-high heat; stir in the ground beef, chicken bouillon, garlic powder, black pepper, and onion powder. Cook and stir until the beef is crumbly, evenly browned. (Do not drain)

Stir in the flour (sprinkling it all over the cooked hamburger) and cook for 3 minutes, stirring constantly. Stir in the broth and milk and bring to a simmer, stirring constantly. Reduce heat to medium-low, and simmer 5 minutes to thicken.

1 lb ground beef
1 can tomato soup
1 T mustard
1 T brown sugar
Dash worchestershire sauce

Brown meat, add remaining ingredients & heat through. Simmer a few minutes. Serve on Hamburger buns. Easy to make double the batch and freeze one.

Baked Spaghetti

Mix and spread on bottom of 9X13 pan: ¾ c sour cream & ½ c cream cheese

Cook spaghetti noodles and put on top of cheese mixture.

Layer:
Sliced fresh mushrooms
Browned hamburger ½ lb.
Cheese
Top with spaghetti sauce
Sprinkle top/parmesan cheese.

Bake covered at 350 for 1 hour.

SALISBURY STEAK

1 pound ground beef
1/4 cup onion
1 cup soda cracker crumbs
Dash of salt, pepper, garlic salt
1 egg

Mix ingredients. Make into patties. Brown and put in baking dish. Make gravy and pour over patties. Cover and bake for 1 hour at 350 degrees.

1 can cream of mushroom soup
1 can water
1 pkg dry onion soup mix

Pizza Burgers

1 pkg hamburger buns, split open
1 lb browned ground beef
1 can or jar of pizza sauce, I use spaghetti sauce
shredded cheese

Place buns open side up on cookie sheet. Mix the meat with the sauce and spoon onto the buns. Sprinkle with cheese and put in the oven 400 for 10 to 15 minutes.

Pan Nachos

½ lb hamburger
1 can refried beans
1 c shredded cheese
1 c diced tomatoes
1 small can sliced olives
sour cream
taco sauce
salsa
sliced green onions
jalapenos, sliced

In ovenproof dish microwave. While cooking hamburger, heat beans in microwave. Layer hamburger on top of heated beans. Top w/ cheese. Broil until cheese is melted. Let cool about 3 min. top with tomatoes, olives, & green onions. Pass sour cream, taco sauce, salsa, jalapeƱo and tortilla chips.

Montana Goulash

Brown:
1 lb. ground beef
1 medium onion, chopped
½ green pepper , diced

Add to: 1 can of Franco American spaghetti (I used spaghetti O’s)
and 1 can chili with beans

Stir together pour into a casserole dish cover with 1 cup of shredded cheese. Bake at 350 for about 30 minutes.

Skillet Tacos

Warm flour tortillas on griddle or in skillet, flip over. Put about ¼ c grated cheese on tortilla and about ¼ c cooked hamburger down the center of tortilla fold to make a taco (not a quesadilla☺) Once cheese has melted, remove from griddle. Serve and pass shredded lettuce, diced tomatoes, taco sauce, ketchup, and/or salsa.

Ranch Burgers

1 lb hamburger
1 egg
½ bread crumbs
2 T worchestershire
Salt & pepper
1 can cream of mushroom soup
½ c grated cheese

Combine first 5 ingredients and shape into paties, fry in skillet, turning to brown on both sides. When almost done- add soup to pan. Spread over patties. Cover and heat, remove patties leaving soup in pan. Add cheese and stir until smooth. Serve over mashed potatoes and ranch burger.

Mexican Casserole

1 lb hamburger
1 med onion
1pkg Fritos or corn chips
1 can chili con carne
1 can cream of mushroom soup
1 can corn
½ to 1 cup cheese

Brown onions & hamburger add chili and soup, mix and season with salt & pepper

Add fritos and mix. Bake 45 min. @350
