Super Easy Roasted Cauliflower

Super Easy Roasted Cauliflower

Cut you cauliflower up into little flowerets toss with olive oil, sprinkle with a course salt. Put in a 400 degree oven, for 30 to 40 minutes or until cauliflower starts to brown.

Roasted Pumpkin Seeds

2 c pumpkin seeds, well washed

Boil seeds in a small amount of salted water for 10 minutes. Drain and dry on paper towel.

Combine: 1 t Worcestershire sauce, 3 T melted butter, 1 t salt, ½ garlic powder. Pour mixture over seeds and stir until seeds are well coated. Bake on a baking sheet for 102 hours in a 225 _ oven, stirring often. Seeds should be crisp and not burned.

Spinach Quiche Cups

1 10oz pkg of frozen chopped spinach
¾ c shredded cheese
4 eggs
¼ c finely chopped onion
3 drops hot pepper sauce

Pre-heat oven to 350 spray a 12 cup muffin pan with cooking spray. Cook spinach in microwave for 21/2 minutes, drain excess liquid. Combine spinach, cheese, egg, onion, and pepper sauce. Divide evenly into muffin cups, bake for 20 minutes until wood pick come out clean. Yields 12

Perfect Spinach

3-4 lbs fresh baby spinach
1 tbsp olive oil
2 tbsp minced garlic
24 oz pkg of sliced mushrooms

Heat olive oil in pan, saute minced garlic until turns slightly brown. Add fresh sliced mushrooms, saute until just tender. Remove garlic and mushrooms from pan, place in large serving bowl. Put spinach in same pan, add 1/4 Cup water, cover. Steam 3-4 minutes until spinach is tender crisp, but not limp! Add spinach to garlic and mushrooms, toss all, serve hot. Yummy!

Texas Salsa

2 large Avocados, diced
2 large tomatoes, diced
1 can of corn, drained
1 can black eyed peas, drained
Cilantro, chopped
1 packet of Italian dressing made as directed.

Mix all together and serve with tortilla chips.

Green Beans with warm Bacon Dressing

Green Beans with warm Bacon Dressing

3 slices bacon, chopped
1 large shallot, minced
½ c. chicken broth
1 Tbs. cider or red-wine vinegar
1 lb. green beans, trimmed

In skillet, cook chopped bacon till crisp. Remove and set aside. Add shallot and cook for 5 minutes. Stir in chicken broth and vinegar, and bring to boil over high heat; cook for 2 minutes. Reduce to low and keep warm. Boil 4 quarts of salted water. Add beans and cook for 5 minutes, or until they are crisp-tender. Drain well. Whisk warm dressing and spoon evenly over green beans, then sprinkle with bacon. Makes 6 servings.

2 pounds fresh green string beans
2 green onions, finely chopped
2 tablespoons butter or olive oil
1 red bell pepper, seeded and sliced lengthwise in strips
Salt and Pepper

Wash green beans. Trim ends as needed. Drop beans into boiling water and cook for 15 minutes or until tender. Pour off hot water.

Saute green onions in butter on low heat for about 2 minutes. Add red pepper and continue cooking for about 5minutes. Toss Beans, peppers, and onions together. Add salt, pepper, and butter to taste.

Egg & Pasta

Egg & Pasta- (throw in some chopped crisp bacon and you have a fast version of Pasta Carbonara)

16 ounces spaghetti cooked, as directed, in salted water.

Drain, leaving moist, with a little bit of water remaining.

Stir in 1/3 to 1/2 stick of butter, add 3 eggs. Stir well. Eggs will cook quickly, within minutes while stirring. You will see the white streaks. Serve and add graded Parmesan cheese to taste. It is so tasty, though simple and inexpensive.

How to cook whole wheat

1 c of clean, whole kernel wheat
2 c water
1 t salt

Wash the wheat. Add wheat, salt, add cool water and let soak overnight or for 12 hours. After soaking time is up, place soaked wheat over heat, bring to boil and boil for about 5 minutes. Turn heat to simmer and let cook until tender about 1-1 ½ hours.

Yield: eight to ten servings.

*Whole kernel wheat and boiling water may be put into a thermos bottle and held overnight to cook the wheat. it may also be cooked in a deep well cooker, double boiler or Crock pot.

The Inn at Temple Square’s Raspberry-Honey Butter

The Inn at Temple Square’s Raspberry-Honey Butter – Lion House Classics

1 lb. butter 8 oz. raspberry preserves
8 oz. honey 1 t. vanilla

Whip butter until light and fluffy. Add honey, preserves, and vanilla. Whip until well mixed. Chill. (may prefer to use seedless raspberry preserves)

Honey Butter—Beat together until smooth 1/2 cup butter and 1 cup honey, then chill.

Stir well before serving.
