Pineapple Glaze for Ham

Pineapple Glaze for Ham (Keturah Woolston)

Mix 1 cup of brown sugar, 1 T cornstarch and ¼ tsp salt in a saucepan. Stir in 1 can (8 1/2oz) crushed pineapple with syrup, 2 T lemon juice and 1 T prepared mustard. Cook over
medium heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute.

This recipe can be prepared and used as a side glaze to your ham or I also like to score a criss-cross pattern along the top of my picnic ham and pour the glaze over the top and let
it bake in with the ham & it’s juices.

(We enjoyed this topping at the Relief Society Christmas Party 2010)

Texas Salsa

2 large Avocados, diced
2 large tomatoes, diced
1 can of corn, drained
1 can black eyed peas, drained
Cilantro, chopped
1 packet of Italian dressing made as directed.

Mix all together and serve with tortilla chips.

Easy Gravy

1 can cream of mushroom soup
½ soup can of milk
1 cup grated cheese

Combine, heat until smooth & cheese melts, serve over potatoes.

SALISBURY STEAK

SALISBURY STEAK (Freezes well)

1 pound ground beef
1/4 cup onion
1 cup soda cracker crumbs
Dash of salt, pepper, garlic salt
1 egg

Mix ingredients. Make into patties. Brown and put in baking dish. Make gravy and pour over patties. Cover and bake for 1 hour at 350 degrees.

1 can water
1 pkg dry onion soup mix

Sweet Pork Salad and Cilantro Ranch Dressing

Sweet Pork Salad and Cilantro Ranch Dressing:

1 pork tenderloin (Costco) 1/4 cup brown sugar, 1/4 cup honey, 1 can green chili, 1 tsp. garlic powder, 1 tsp salt, 1/2 tsp. pepper, 1/2 tsp. onion powder, 1/3 cup water,1/4 cup red salsa, 1/4 cup green salsa.

Cook pork on high with chili's, garlic powder, water, until meat starts to shred, (about 4 hours in a crock pot) continue cooking on low until completely shredded.

Cilantro Ranch Dressing: 1 bunch of cilantro, 1/2 cup mayonnaise, 1/2 cup sour cream, 3/4 package of dry ranch dressing mix, 2 clove garlic, juice of 2 limes, 1 tsp hot sauce, (optional). Place all in a blender until smooth.

Layer: 5 cups romaine and 5 cups iceberg lettuce, cooked pork, then black pinto beans, rice(optional), tomatoes, avocado, tortilla chips and cheese. ENJOY!

2 1 lb pkg of Jimmy Dean sausage (hot)
3-8oz pkg cream cheese
2 cups of sour cream
1 7oz can of green chilies
3-4 roma tomatoes, chopped

Brown sausage. Add all ingredients in a crock pot and cook on low for 3 hours. Serve with tortilla chips.

Fettuccine Alfredo

1/2 c. flour
1 can evaporated milk (or regular milk is ok)
2 Tbl. Cream cheese (I use more than this)
1 cube butter
3/4 c. Parmesan cheese
oregano to taste. (Crush dried oregano between your fingers to release flavor)
salt and pepper to taste (I use seasoned salt)

Melt butter in saucepan. Add flour with a whisk until all is moistened. Add milk immediately and whisk until smooth. Add cream cheese. Then pour everything from the pan into the blender. Blend well so there are no cream cheese lumps. (I usually skip this step and just melt and whisk it really good in the pan!) Return to pan over medium heat. Add remaining ingredients; stir until thickened. Add milk as needed to reach desired thickness. Add chicken if desired. Serve over fettuccini (or your favorite pasta).

2 cans of Campbell’s Cheddar Cheese Soup
1 large jar of Salsa (we prefer Herdez Salsa)
1-2 small cans of diced green chilies
1 pound of lean hamburger, browned and seasoned to taste.

Pour all ingredients into a crock pot for about 45 minutes before serving.

Serve with chips

2 (10 3/4-ounce) cans cream of chicken soup, undiluted
1 cup sour cream

In a small saucepan heat soup and sour cream together over low heat, stirring frequently.

Goes well with Parmesan Chicken Recipe

3 T. pine nuts, toasted
2 c. fresh basil, washed and patted dry
1/2 c. Parmesan cheese
1/4 c. Romano cheese
2 cloves garlic
2/3 c. olive oil
1/2 t. salt
2 T. butter
dash of pepper

Combine all ingredients in a food processor or blender until smooth. Refrigerate until ready to serve. Makes about 2 cups.

**I make a lot in the summer and freeze it in jars. When you freeze, coat top with olive oil so it won't brown.

One 16oz container fat free Greek yogurt (in most stores by regular yogurt)
1 ranch dressing mix (for 16 fl. Oz)

That’s it, yummy and way more Guiltless!

Red Salsa:(you can chop all by hand or by processor)

3 red onions, chopped, washed and drained in a sieve. Place onions in a bowl and add juice of 3 lemons to the chopped onions. Knead the onions and lemon juice for about 3 minutes until the onions change their consistency. Set aside
Chop 14-16 roma tomatoes, ½ bunch of fresh cilantro, and 1-2 jalapeno chilies together. Add onions to tomato mixture and stir in 1 to 1 ½ T salt. season to taste. ready to eat!

Green Salsa:
Chop 12-15 tomatillo (little green tomato looking with skins...remove skins under stream of water from kitchen faucet for best results), 1-2 cloves of garlic, ½ bunch fresh cilantro, 2-3 Serrano chilies in a processor or by hand. Add 1 to 1 ½ t salt. Taste...ready to eat

1 buttermilk ranch packet for 16oz
(1 c buttermilk & 1 c mayonnaise or
1 c milk & 1 c sour cream)
2 tomatillos, with paper petals removed
1 clove garlic
juice of one lime
½ bunch of cilantro
1 jalapeño (opt. but very yummy)

Blend in blender and adjust according to taste.

Makes 1 cup

1 8oz can tomato sauce
1 tsp Italian seasoning
3 cloves of garlic, crushed in
garlic press, or diced fine
Salt to taste

Mix everything together.

Clear French Dressing

1/3 c sugar
3 tbls prepared mustard
1 ½ tsp salt
1 c plus 3 tbls vegetable oil
1/3 c white vinegar

Wisk all together in a bowl until well blended. Great on any salad.

1 cup mayonnaise
1 cup milk
1 tsp. lemon juice

Mix well add the following to taste:
seasoned salt, onion salt, garlic powder, celery salt, salt & pepper, parsley.

For a change you may add ¼ cup crumbled blue cheese.

Thousand Island Dressing

1 cup mayonnaise
1 Tbls. finely chopped onion
2 Tbls catsup
1 egg, hard boiled and finely chopped
2 Tbls sweet pickle relish
1/2 tsp salt
1 Tbls finely chopped green pepper

Combine all ingredients in a bowl, beat until smooth. Store covered in the fridge. Makes 1 1/2 cups.

2 tsp onion powder
1 cup sugar
2 tsp garlic powder
1/2 cup ketchup
1 tsp paprika
1/2 cup white vinegar
3/4 tsp celery seed

Mix in blender and chill.
