Potato Cheese Soup

Potato Cheese Soup

-- 10 potatoes, peeled, chopped, boiled-- save water
1/4 cup of butter, melted
2-3 cups milk
1/2 pint heavy cream
1 small onion, chopped finely
2-3 cups grated cheese

Sauté onion in butter, add to potatoes. Mix with hand mixer until smooth. Add milk to desired thickness, blend. Add in cream. Blend. Add in cheese. Heat until hot all the way through. (Use potato water to smooth if too thick).
