Sweet Jenny Cornbread

Sweet Jenny Cornbread

Cream together the following in a mixing bowl:
1 1/4 C sugar
2 eggs
1 C cornmeal
1 tsp salt
2/3 C softened butter or butter shortening

Then add:
2 C flour
2 1/4 tsp baking powder
1 1/2 C milk

Spray a 9x13 pan OR two JUMBO muffin tins (makes 12 jumbos total.) I haven't tried with regular muffin size, so you'd have to adjust the baking time somehow. Pour in batter evenly into pan and bake at 400 degrees for about 25-30 minutes for the 9x13 pan, or at 375 degrees for about 20 minutes for the jumbo muffin tins, until they are slightly browned.
