Simple Chicken Fingers
Skinless, boneless chicken breasts (approx. 1 pound, depending on number you are planning for)
1 C. all purpose flour
1/2 tsp. salt
1/4 tsp. pepper
3/4 C. milk
1 C. oil for frying (or use a deep fryer - I do)
*Cut chicken into 1/2 x 2-in. strips (I usually make mine a bit longer)
*Mix flour, salt and pepper in a shallow bowl.
*Dip chicken in milk, then roll in flour mixture to coat well. Lay out on waxed paper.
*Pour 1/4 inch of oil into a large heavy skillet. Heat over med/hi heat to 350 degree (or until a cube of white bread dropped in oil browns evenly in 1 minute) OR just heat your oil in your deep fryer.
*Place chicken in an even layer in hot oil. Fry, turning once, for about 3 minutes on each side or till golden brown and crisp.
*Drain on paper towels.
Serve with your choice of sauces: Ranch, Sweet 'n Sour, Honey mustard
(for Honey mustard mix 1/2 C. honey w/1/4 c. Dijon mustard and let sit while you prepare chicken)
