Poppy Seed Chicken

Poppy Seed Chicken

3 whole chicken breasts
1 can cream of chicken soup
1 cup sour cream
2 c. Ritz crackers, crushed
1 Tablespoon, poppy seeds
1/2 cup butter

Cook chicken for 15 minutes or until done in slow boiling water. Remove from water and cut into chunks. Place in 8x8 casserole baking dish. Mix soup and sour cream and spread over chicken. Crush crackers and add poppy seeds and butter. ( I rarely use the poppy seeds, because I don't have them--it still tastes yummy) Spread over top. Bake at 350 for 20-30 minutes. Serve over rice.
