Meatball Soup

Meatball Soup

Prep time: 1 hr. 15 min. Serves: 8-12
(to cut prep. time down, make meatballs ahead of time and place in fridge for 1-2 days before using)

2 lbs. ground meat
1/4 C. rice
1/3 C. chopped onion
1 1/2 tsp. garlic salt
1 egg
1 tsp. pepper

Mix together ingredients then roll into ping-pong size balls. Heat 4 C. water and drop meatballs into water and bring to a slight boil. Cook over low to med. heat for approx. 20-30 min.

After meatballs are cooked, add the following ingredients.

8 to 16 oz. tomato sauce
1 tomato peeled, chopped or use canned
2 tsp. garlic salt
3/4 tsp. pepper
1/4 C. rice

Continue cooking for 30 min. Serve!

Note: you may want to use more or less pepper depending on how spicy you like it. Add carrots, potatoes, etc....to change it up.

NOTE: This seem like an odd soup, but it is soooooo good. I got this from RS years ago in AZ. At first I thought how crazy, a meatball soup. With the insistence of my daughter, I tried it and I couldn't get enough. It was wonderful. The flavors were delightful. I hope that you enjoy!
