Cheryl’s Bean Soup
1) 2 C. pinto beans, washed & cooked as directed on pkg.
2) 1 lb. bacon, chopped then cooked slightly (not crisp) w/ drippings
3) 2-3 large tomatoes, chopped, 2 bunches green onion, chopped,
1 jalapeno pepper, sliced & seeded
4) 1-3 bunches of cilantro, chopped
Add ingredients on #2 and #3 together and simmer 15 min. to blend flavors. Then add all to #1(the beans). Cook over low to med. heat to mingle flavors, about 30 minutes.
Add # 4 to pot and continue cooking fo another 30 minutes.
SERVE with corn tortilla chips
